Dinner was two of these delicious burritos...
Whole wheat tortilla with chicken thigh meat, onion cooked in black beans, salsa, avocado, spaghetti squash baked with thyme, brown rice, and rainbow swiss chard cooked with garlic and lemon pepper. Amazing.
Some gourmet lunch leftovers of herb chicken tenders, sauteed onion and spinach, butternut squash, and cucumber tomato salad with some cilantro. Also enjoyed a plum, some crystalized ginger, and a no bake granola bar for snack.
Another day of allspice apple strawberry oatmeal served with pistachios, figs, dried cherries, and soymilk. Accompanied by a Red Rooibos Tea Latte.
