Much Cooking Today

An Easy Mediterranean/Middle Eastern Dinner
 Farmer's market supplied Spinach Bolani (pita) and Spring Roll, with my own Greek Salad and Raita, and some hummus.  Delicious for days!
-Greek Yogurt, minced Cucumber, Cumin, Garam Masala, Turmeric, Cilantro, Lemon
-Greens salad with Olives and hummus
-Lemon Onion Dressing
Post Ride Part 2: SOUP
 Thanks to the rainy nature of the weather, I decided to make a Carrot Ginger Soup (also inspired by butternut squash from the cooking club and abundance of carrots at my house).  It's vegan and pretty easy to make; I was very pleased with it.
-Multi colored carrots, half an onion, minced ginger, olive oil, broth, OJ, nutmeg, salt n' pepper, parsley
-Greens salad with Citrus Ginger Vinaigrette, Tofu and Pistachios
-Brown Rice and Tofu
 Post Ride Part 1: Strawberry, Blueberry, OJ, Ice, Dates, Cinnamon, topped with a random Vegan Sesame Snack
Warm Nutty Sweet Oatmeal FTW
As usual, oatmeal at home is so much better than in tupperware.  My kitchen was filled with the scent of fresh hot extra thick oats cooked with vanilla and a banana.  I topped with soymilk, persimmon, banana, and Almond butter.
