Epic Salad, Baking Plum Bread, Muesli Mashup

 A quick light dinner of salad and butternut squash saute. I love leeks and garbanzos.
-Butternut squash, leeks, dried cranberries, olive oil and lemon, thyme
-Romaine Lettuce, Roma tomato, cucumber, Garbanzos
-Lemon, olive oil, parsley, rice vinegar dressing 
 I enjoyed Dinner leftovers for lunch. Supplemented with hummus.
 Plum Oat Bread for the Cooking Club!
I needed to bring something and had lots of plums so came up with this. Vegan Plum Oat Bread with almonds.  It ended up being less of a dessert like quick bread and more like a scone like breakfast treat that would go good with honey, jam, or olive oil/yogurt on it.  Moist and sweet like banana bread but crunchy and with plums!  I had to whip up some applesauce because I had no eggs.  A big hit for sure and totally healthy!
-Wheat flour, baking soda, baking powder, 
-Salt, cinnamon, cloves, brown sugar
-Soymilk, white vinegar, vegetable oil, applesauce
-Plums, Oats, Almonds
Raspberry Muesli MashUp
You know when the more work and more ingredients you add to something the better it gets? Well that's how my muesli combos usually work out. Epic.
-Thick Oats, Rye Flakes, Oat Bran
-Almonds, Hazelnuts, Flax Meal
-Cinnamon
-Dried Cranberries
-Soy Yogurt, OJ, Honey
-Raspberries, Extra Apple Sauce from Plum Bread
