Living alone = my fridge is now totally empty. I successfully used the few remaining ingredients for three epic meals! Food shopping is going to be mega. I may even benefit from using a laptop messenger bag from CSN stores where I get cookware.
I've been wanting to use the Nori (dried seaweed) with some Quinoa for a while, so finally got to it. #1 It's good by itself like potato chips but even better mixed into food to add a salty touch. Asian Ginger Sesame Quinoa with black beans, and more so easy so yummy Hummus-Cranberry salad.-Quinoa, cooked in minced ginger/zucchini/carrots, nori, sunflower seeds (no sesame in my house), sliced almonds, sesame oil, soy sauce, rice wine vinegar, olive oil, ginger powder
-Salad with Cranberry Sauce and Hummus
-Black Beans
Almond Butter-Cranberry-Hummus is Key
Inspired by rice dishes from Cafe Del Soul, which mix almonds, dried cranberries, and hummus for success, I came up with this. #2 It was awesome and required minimal preparation.
-Hummus, almond butter, and Cranberry sauce to dress/top it all off
-Brown rice, Cucumber, Lettuce, Pistachios
-Garlic-Thyme Chard Saute leftover from dinner
Apple Ginger w/ a Splash of Orange Theme
School starts late = fresh oats at home! Except it was a mix of rye flakes and oats b/c I ran out. This flavor combo was awesome with a cup of Rooibos Chai made with Stevia, Agave Nectar and Minced Ginger. #3 I'm going to start mixing almond oil into breakfast more often, it's super tasty and good for you!
-Oats, Rye flakes, apple/minced ginger/almond oil/ginger powder cooked in
-Cranberries, Candied Ginger, Pecans, Almonds
-A bit of Soymilk, OJ, and Agave Nectar to sweeten
