Soba WINS, Guacamole, Shredded Apple

Soba Noodles!
I got Buckwheat Soba Noodles at the market the other day and am stoked to make them for the first time.  Went with a Basil-Tomato-Pesto theme with plenty of ingredients to make it burst with flavor.  I added olives and extra sun dried tomato to it in my after dinner snack and it was even better. #1 It was actually super quick to prepare (6 min cook time).
-Buckwheat Soba Noodles mixed with the following:
-Tomato, Basil, Sun Dried Tomato, Tofu, Garlic, Green Onion, Basil Pesto, Sunflower Seeds, Olives
-Rainbow Garlic Thyme Chard (chard, garlic, olive oil, vegetable broth, thyme)
 Beet Salad + Wrap
A little Mexi-Turkey Wrap with some Chips n' Salsa and Beet Salad.  #2 Similar to Hummus and Cranberry, Salsa and Avocado go a long way in a wrap or sandwich.
-Wheat wrap, Herb Turkey, Guacamole, Salsa
-Flax Chips, Salsa
-Basil, Broccoli, Beets, Green Onion, Avocado, Rice Wine Vinegar
Muesli from the Batch
It's nice to have a big jar of my own muesli. #3 I used an Apple cored and shredded and it tastes soo good in muesli. The flavor is ridiculous, especially with the cinnamon.
-My Muesli
-Yogurt, Agave Nectar
-An apple, melon, extra dried cherries
