Stuffed Portobello and Red Breakfast

 Thanksgiving Discoveries Come in Handy
My family enjoyed the Stuffed Portobello Mushrooms on Thanksgiving so much that my mom suggested we make it a Thursday weekly. A garlic onion thyme explosion accompanied by more veggies and hummus. #1 This meal was awesome because I got to enjoy all 4 kinds of healthy fats I eat, hummus, olive oil, pistachios, and avocado. 
-Stuffed Portobello Recipe with substitutes of kidney beans/pistachios
-Salad w/ Avocado and Balsamic
-Broccoli and Hummus

Once again, I thought this simple enough meal would be mediocre, but it was delicious in in its simplicity.  the magic of good clean healthy ingredients. #2 supplementing with additional spices helps a lot (turmeric and ground pepper on the soup)
-Sunflower Seed Bread (becoming a big fan of the stuff)
-Veggie Soup Leftovers
-Lentils, hummus, and avocado
-A Kiwi!

Red Fruit Cinnamon Oatmeal (this combo should be in a Valentines day ad)
The benefit of making oatmeal the night before over quick muesli is I can make enough to separate into servings for each day, and then it's as fast or faster.  Cooking fruit changes the flavor so much too. #3 Strawberries and Raspberries become twice as tasty when they're cooked!
-Thick Oats cooked with Cinnamon, Raspberries, Strawberries
-Soymilk
-Almonds, dried Cranberries, additional fresh Strawberries
