Solid Breakfast Better Dinner!

Chicken-Kale-Sweet Potato
 Took some left over chicken to brown in a pan with other goodies, joined by a baked sweet potato and some cooked kale.  Some random spices and ingredients which worked amazingly together. All mixed with some Garlic Hummus. Kind of an adaptation/inspiration from my Chicken Tagine recipe. 
-Baked Sweet Potato
-Chicken Thigh, Onion, Olives, Almonds, Carrot, Garlic, Lemon
  -Spices: Carraway Seeds, Mustard Seeds, Coriander, Cilantro, Granulated Onion
-Kale Sauté (Garlic, Lemon, Veggie Broth, Granulated Garlic, Pepper)
-Hummus and Cherry Tomatos to top

Pumpkin Quinoa Cereal
    Yup. The Pumpkin's Final Stand, and Quinoa makes its return into my breakfast.  Not quite a parfait because i'm cutting yogurt this week, but just as good (just don't use too much milk).  Pumpkin + Spices is once again epic with blueberries and banana going with it perfectly.  A little extra sweetener from my super awesome Pumpkin Butter I threw together last night, linked below.  This bowl had great texture proportions, a nice gushy quinoa (which has a nice crunch at the same time) and fruit, crunchy almonds, chewy cranberries, and creamy soymilk bursting with all the above flavors. Plenty of protein in this breakfast too (Quinoa+Soymilk)
-Quinoa, 2-3t Pumpkin, Cinnamon, Ginger, Allspice, Nutmeg
-Cranberries, Almonds, Coconut Flakes
-Soymilk, PUMPKIN BUTTER
-Blueberries, Banana
