Acai Bowl, Pumpkin Pie Bowl, Massive No Bake Bars, Garlic Lemon Salmon

Acai Bowl!
Version 1.0. #1 Pretty cool that you can buy frozen Acai in the frozen fruit section of grocery stores, already divided into little packets perfect for smoothies.  My little breaky bowl ended up pretty damn good, but not quite as much as what you get from the Brazilian Food Truck on the North Shore or Cafe Brasil.  Partly because mine had no significant added sugar from honey or guarana syrup, but also because strawberries, apple/apple juice and bananas are essential with acai!
-Frozen Acai, Frozen Blueberries, Yogurt, Ice, Cinnamon, Allspice
-Pineapple, Blueberry, Banana
-Galaxy Granola, Almonds
 I  Tempeh
 I am beginning to have a thing for tempeh.  This is about the most unflavored/prepped i've eaten it and it was legit (of course i've hastily eaten some plane during cooking which isn't bad either).  Simple lunch concoction of veggies from the fridge with #2 tempeh for some protein/fat (and olive oil) with basic dressing. Healthy but flavorful and fun to eat a big bowl of salad. The beginnings of a beet salad: beets, rice wine vinegar, onion, and spinach. Onion and beets really go well together. See dessert below!
-Spinach, Tomato, Onion, Cucumber
-Beets, Tempeh (and a hint of Lemony Lentils from Last night, that's fun to say...)
-Rice Wine Vinegar and Olive Oil

Had a craving for Lentils and my mom got a Buddha's Hand at the Farmer's Market so I went at it. Feels pretty cool to use Buddha's Hand and plus, the name just sounds good! I love making Spinach Goma Ae now, and the meal was super clean and healthy, especially tasty with a bunch of hummus. Lemon Sesame Zest all around.
-Lentils, grated Buddha's Hand Zest, Thyme
-Broccoli and Asparagus Steamed with Toasted Ground Sesame and Lemon Pepper
-Spinach Goma Ae, Beets
-Brown Rice and Hummus (not pictured)

    Yup. I cracked open a can of pumpkin and Halloween/Thanksgiving are no where in sight. I don't know why everyone goes crazy about pumpkin foods in the Fall when they just by canned pumpkin which has been on the shelf for years and the season has no effect.  It is now going to become a semi-regular in my breakfast.  Smoothies, Oats, Yogurt, Muffins, you name it. It's a sweet vegetable at breakfast! Commence Part 1 Pumpkin Smoothie Bowl:
-1/2c pumpkin puree, 1/2 frozen Banana
-Cinnamon, Cloves, Nutmeg, Pecans, ice cubes
-Almond Milk, Vanilla Rice Protein Powder
-Topped w/ Blueberries, Dried Mango, a few Stevia drops
   -Galaxy Granola, more Pecans
     This was Pumpkin Pie. Tasty, creamy, and great thick consistency.  It's healthy because it doesn't have much fruit sugar in it like other smoothies or breakfast bowls.  I didn't even remember a pinch of ginger! #3 Blueberries and Pumpkin are a definite combo. Also a good use of rice protein powder, because normally the flavor of rice protein doesn't go so well.
I had one of these bad boys with my salad lunch.
 One of my recipes I'm satisfied with. I doubled to make a whole bunch for a while. The only thing I want to try is using coconut flakes and a bit of coconut oil for a twist. No Bake for life! I used almond milk this time and they are still bomb! #4 Mix and freeze. Healthy protein/carb/fat on the go.
-4c extra thick oats
-8 scoops vanilla protein powder
-1c cranberries
-2c sliced almonds
-2t cinnamon
-4t vanilla
-3t maple syrup
-2/3c soy or almond milk
-1c almond butter
Garlic Lemon All Around
Simple Salmon, Rice, and Salad for dinner, but executed perfectly.  I even got to use Buddha's Hand again. Lemon and Garlic on everything, salad almost tasted just like Sol Food. I was truly quite pleased.
-Salmon browned and cooked in Olive Oil, Lemon, Garlic, Lemon Pepper, Granulated Garlic
-Brown Rice
-Salad with Avocado, Olives and Garlic Lemon Dressing (Chopped garlic, lemon, olive oil, granulated garlic)
-Lemon Pepper, Sea Salt, and 'Lemon Zest' from Buddha all over everything!
