Vanilla Power Bites, Super Grain Combos and Awesome Choco Tahini

I am upping my protein intake to 120g per day so these are so convenient!
On the Go Power Vanilla Bean Bites
I haven't made my No Bake Bars in a while and wanted something that was mostly protein with some fat for supplementation/snacking. I was motivated to try this recipe since it seemed even easier than the bars! Plus I got to make changes to my liking! I used the stevia for baking as well but it was too much combined with the stevia that's in my whey powder so I'll leave it out next time.
(Makes 12)
  • 1/2c Coconut Flour
  • 3 scoops or 1/2c Tera's Vanilla Bourbon Whey
  • 1/2c Oat Bran
  • 3T Almond Butter (I used creamy but will def go crunchy next time)
  • 1/4" Ground Vanilla Bean
  • 1T Chia Seeds
  • Plenty of Water
  • Lemon Poppyseed Option (use 2-4T Lemon Juice for the water)
They are quite mushy if you eat them completely defrosted-not too dry or floury at all! I enjoyed them a lot more nearly frozen so you can really bite into them like a cookie.  The Chia Seeds are key! Sort of a Super Sweet Vanilla flavor with yummy granule-ness to it from the Chia Seeds, like a PoppySeed Muffin! I can't wait for Lemon Poppyseed Muffin edition!
For some reason I really wanted this for breakfast.  A Matcha Salt Egg White Avo Nori Wrap!  Takes 2 seconds to make if you have the ingredients ready from before.  I have a supply of hard boiled eggs in the fridge at all times (super convenient protein source).  Super tasty notes of seaweed and green tea, with creamy avocado and savory sea salt!
Choco Tahini Grain Bowl Beginning
After seeing a Whole Athlete Coach John Hunt munching on a bowl of mixed grains on the way to the race the other weekend, tahini, avocado, chia seeds, and whey protein powder on the way to the race the other weekend, and then seeing this creation, I had to try out this new frontier! I already wanted to try some grain combos in the ricer cooker, and be able to use more leftovers for breakfast too.
The Choco Tahini Beginning
First more experimental try had Avocado, 70% Cacao Chocolate, Carob Chips, Chia Seeds, leftover Brown Rice, Almond Milk, Tahini, Vanilla Plant Protein, and Strawberries/Blueberries. I also tried a bit of ginger, cinnamon, and turmeric sprinkled in.  I love biting into the broken choco chunks.  The Chia Seeds play a key crackily crunch role and the Avo-Tahini-Milk-Protein Powder makes a nice thick creamy mix.

 The real deal. Creamy, mushy, and chocolatey goodness! I got to use my delicious grain combo from dinner (below) and don't have any unsweetened baker's chocolate yet so used some Carob Chips.  They were a bit too sugary so for me the unsweetened chocolate will be good.  The sesame from the Tahini combines with a chocolate flavor perfectly. 1c Quinoa, Buckwheat, Millet
  • 1T Tahini
  • 1T Carob Chips
  • 2T Chia Seeds
  • 2T Vanilla Plant Fusion Protein
  • 1/4c Blueberries
  • Almond Milk
  • Ginger/Cinnamon/Turmeric (Optional)

I recommend adding the Tahini, Protein Powder, and Almond Milk in the morning for optimal mixing (less grain absorption/solidifying). The avocado doesn't look the best but is totally worthy if your into it/have it on hand.
Super Grain Combo and Basil Pomegranate Chicken Salad
Pretty much a repeat except in the oven, I didn't have avocado for my pomegranate spinach chicken salad, but it was a sweet flavorful feast anyways! The grain combo takes quinoa and makes it more like brown rice, but much healthier (more protein, fiber and nutrient dense). Red onions baked with the chicken get so sweet, glazed and delicious!
  • Chicken Breast, Dressing below as a marinade, Pine Nuts, Cactus, Red Onion, Basil, S & P,
  • (1c cooked) Millet, Quinoa, Buckwheat (equal parts)
  • Hummus
  • Spinach, Radicchio, Tomato, Olives
  • Dressing: Olive Oil, Pomegranate Juice, Balsamic Vinegar, Basil

So Much Bungalow Munch-Cacao Nib Edition! and Super Lentil Soup

At first I thought I couldn't eat granola for breakfast on school days because it's less clean, has less protein, and usually more sugar and fat then oats, but I proved my self wrong and am stoked!
Clean Protein Munch
Since I'm inching away from soy which normally supplies extra protein, I came up with this. Unsweetened Almond Milk goes perfectly due to the nutty nature of the granola and makes the perfect amount of sugar from berries and granola with fat from granola. Just no need to add any extra nuts/seeds/nut butter. #1 Then the other key is protein from sprouted quinoa! Just sprinkle it in simple as that! Plus it makes a more seedy yet still roasted and delicious breakfast.
  • 1/3c Bungalow Munch, 3t Sprouted Quinoa
  • Pomegranate
  • Almond Milk
To continue the stokage on eating granola for breakfast more often, Jeri has been experimenting with a Cacao Nib version of Bungalow Munch, and I got to test!
Cacao Nib Munch Part 1
The cacao nibs are mixed in just enough to give it a nice dark chocolate touch, not a bitter cacao nib sensation like if you try to eating them straight. They also seem mixed into the granola much better than if you just add them yourself, sort of becoming more infused? They turn an already delicious granola into what could be viewed as a chocolatey dessert treat, or a breakfast for chocolate lovers! It also pairs with this awesome coconut yogurt I'm finally trying perfectly for a chocolate coconut crunch fest. Such a creamy and crunchy bowl, not actually too sweet or dessert-y in my opinion. It isn't as sweet as one might expect, although I wouldn't mix it with sweetened milk/yogurt or any additional sweetener, it's just right! I still had to try it with banana rather than blueberries.
  • 55g Cacao Nib Bungalow Munch

  • 4oz So Delicious Coconut Yogurt

More soy-freedom for me, again I just don't have to add any extra source of fat since it provides enough. This may answer my dairy free, soy free yogurt dilemma! It tastes just like a coconut pudding dessert (Huapia) super caloric/high in fat but its actually only 7g of fat in an entire container. Just a real creamy coconut-y experience! the only downside to this stuff is its not the cheapest thing on the market but it's easily worth it every once in a while. #2 When I eat breakfasts like these with less protein I just pack a hardboiled egg white to snack on later for when I get hungry. Which I will fairly soon!
Whoa! Almond milk is almost as creamy as coconut but way more nutty and therefore has more pizazz than coconut, requiring less sweetener from the other accompaniments. Of course the banana compliments the cacao nibs (and nut milk) perfectly for banana-chocolatey nut experience. I also noticed that the cacao nib version stayed more crunchy overall despite my early nut milk addition since I had to bring it to school (unlike before when it got more like soggy cereal during transport).

Upgrade: Lentil Soup
I used to have this all the time, but now take it to new heights. Before, it was always the soup mix in less water then instructed, and add additional canned lentil mixes along with some fresh vegetables and a bit of spice. I dropped the canned part and added the water, but then upped the vegetables, herbs, and spices. It came out with so many yummy flavors! Basically use whatever vegetables seem good from the fridge/need to go (like always with soup). The fresh herb and spice combo is now dialed. The addition of almond oil is strong but tasty, so I may go a little lighter on that next time. #3 I just boiled the mix as instructed and added vegetables at the right times to cook them evenly, and then mixed in the spice combo and oil. The garnish makes it even tastier and more fancy. Phenomenal!

    Sweet Miso Fish, XL Tuna Salad, Love Grown Granola Review

    I'm loving more Miso in my cooking. This Tilapia with Sweet Miso Glaze was perfect. Accompanied by a Miso-Dressing salad and some sweet Baked Sweet Potato and Purple carrots (also sweeter than normal carrots!). 
    Sweet Miso Tilapia
        The caramelized onions compliment all the sweetness while the pepper and parsley balance things out a bit.  The chicken broth and Mirin (Sweet Rice Cooking Wine) taste were ever present and delicious as well. 
         Let the onions caramelize in olive oil first, and then add the tilapia filet with Parsley and Lemon Pepper, cook a minute or two on each side and then simmer with the Miso Sauce for another minute or two. #1 I then took the extra Miso Sauce and mixed it into a dressing for the salad! It complimented the bitter Radicchio also balanced out by some crunchy sweet sugar snap peas!
    • Tilapia Filet, plenty of Dried Parsley, Lemon Pepper, Sea Salt, Miso Sauce
      • Miso, Mirin, Chicken Broth
    • Baked Sweet Potato and Purple Carrot
    • Radiccho, Tomato, Sugar Snap Pea, and Avocado Miso Salad
      • Miso, Chicken Broth, Rice Vinegar, Olive Oil, Mirin
    The XL tuna salad I made gave me a delicious belly full of beans and vegetables and served 1.5 people at dinner and then a meal for me again the next day.  I pretty much just referenced this occasion, except adjusted for what was on hand and actually used White Beans like the original Italian idea calls for, making it the significantly large quantity of salad.

    The new sun dried tomatoes I got from T-Joe's are delicious, and no garlic = hit the garlic powder.  White beans are a wonderful addition but the 1 can tuna to 1 can beans ratio is not enough tuna. #2 My favorite aspect of this meal besides the taste is that you add whatever you want and taste until your liking. Like making soup.
    Differences:

    • Radicchio, White Onion
    • White Beans
    My wrap for the next day's dinner was remixed with Zahatar, more Hummus, a little rice and a Brown Rice Tortilla for the simplest, quickest, but most delicious meal experience.

    Now for the Love Grown Foods Granola review! I am becoming a granola connoisseur!
    Sweet Cranberry Pecan
       Love Grown Foods makes some nice granola varieties and I got to try 3! Breakfast today saw the Cranberry Pecan.  Primarily aided by delicious cinnamon, I want to say it's a standard yummy roasted granola, a little bit high in the sugar department nutritionally compared to super granolas like Bungalow munch, but is still made with all good organic ingredients, and is very fair in price. I never knew cranberry went so well with pecans, and furthermore pecans with coconut! Well done.
    • 75g Cranberry Pecan Granola, just enough Almond Milk
    • Blueberries and Pomegranate Seeds

    I also tried Cocoa Goodness and Raisin Almond Crunch!  The Raisin Almond has the same cinnamon theme but a nice additional spice like in a yummy Oatmeal Raisin Cookie, and the coconut flakes stand out more since paired with almonds.  Cocoa lovers beware! This chocolatey granola is so delicious it's taste like a decadent chocolate dessert but nutritionally is like a nice breakfast granola? Kind of a dream right? A nice combo and ratio of granola, chocolate chips, and cocoa, and yet out of the three it's actually got a hair less fat and sugar. The wonders of cocoa...

    Super Herb Chicken and WannaBe Peanut Sauce, then the 'Usuals'

    A couple things worth mentioning, and others worth neglecting in this meal. I'll start with the don'ts. 
    Herb Baked Chicken and Super Sauce
         Steaming Brussel Sprouts = Dont. They just don't taste good! Somehow they get really bitter compared to when you grill them, even with my usual mustard seed and sea salt/pepper. I drowned them in my new wanna-be peanut sauce making them palatable, which is a YES. #1 I don't know why i've limited myself to tahini for making dressings/sauces, when almond butter and sunflower seed butter are perfect options! It was like a delicious Asian Sesame or Peanut Sauce that tastes good on anything, but primarily a salad dressing for the tasty Japanese Hijiki Seaweed Salad (I first used the dressing sans-sunflower seed butter to soak the dried seaweed, then mixed it into the sunflower seed butter as dressing). Inspired by our cooking on the team trips, I finally baked a chicken breast. Tons of herbs/spices and delicious leeks, artichoke hearts, and pine nuts! So much flavor yet so clean tasting at the same time. Trader Joe's Marinated Artichoke Hearts (jar) are so delicious especially when baked with chicken. They totally gave me the sensation of eating pizza, but just the good parts of eating pizza!

    -Chicken Breast Baked with Dill Weed, Ground Coriander, Dried Basil, Lemon Pepper, Olive Oil, Lemon
       -Marinated Artichoke Hearts, Leeks, Pine Nuts

    -Steamed BSprouts w/ Mustard Seed, Sea Salt, Pepper

    -Hijiki Seaweed, Cucumber, Tomato, Sunflower Dressing Sauce
        -Sunflower Seed Butter, Rice Vinegar, Lemon, Olive Oil, Water

    -Short Grain Brown Rice

    The chicken made a reappearance in my lunch, remixed with some extra spice!
       Wrap Action
        Implementing my new policy also inspired by my team-trips of having baked sweet potatoes on hand (make a batch and fridge), half of one conveniently served as a sweet addition to my lunch. I supplemented the chicken with some tofu since there wasn't quite enough. #2 Also digging the wrap selection from TJoes - it's far superior to any other market (stupid over processed 'low carb' wheat or gluten free wraps are lame!). Brown Rice Tortillas for the win! Keeping it wheat free for days.

    -Brown Rice Tortilla (TJoes), Radicchio, Avocado, Tomato, Onion

    -Leftover Herb Chicken + Firm Tofu

    -Hummus, Zahatar, Ground Coriander

    -Sweet Potato

    The Good Earth Sweet and Spicy Herbal Tea is so good this massive jar barely lasted 30 min! Accompanied the spicy yet sweet crunchy breakfast bowl perfectly.
    Semi Standard Berry Ginger Spice Crunch
    This would be a standard overnight oats combo for me but there's a few yummy standouts. #3 First is the simple added crunch from the bottom of the bag rice cake puffs. Then go for some pomegranate thanks to more TJoes pre-prepped genius. Last but definitely not least would be the carrot/ginger juice infused into the oats for a nice bite to compliment the usual spice combo!

    -65g oats, 200g soymilk/almond milk/carrot juice/ginger juice (had a bit of each left)

    -Blueberries, Pomegranate, Strawberry, Dried Cranberries

    -Nutmeg, Cinnamon, Cloves

    Mega Muffin Time, Special Spices Party Bowl, Passover Dinner

    Passover Seder
    My whole family from Israel is visiting currently so we had a mega Passover sesh. I didn't prepare this meal but it was pretty tasty and I was able to keep with in my usual eats by avoiding the other foods so why not include it.  My highlight was probably the salad. I wish the Golden beets were more substantial but the super Lemony Citrus Vinaigrette dressing was bomb. A Yam/Sweet Potato/Carrot mashup with Honey is of course tasty, and I left the chicken skin behind. I did snag a sample of the Hungarian Flourless Pecan Torte, which was pretty epic. #1 Almond flour instead of flour = dialed flavor and health, and plenty of ground walnuts, cocoa, and Pecans on top made it moist, warm, and delicious. I could only have a bite due to my walnut allergies though...
    -Plum Chicken
    -Sweet Potato/Yam/Carrot Mashup
    -Lemon Vinaigrette Salad w/ Golden Beets

    Super Steamed Vegetable and Spice Bowl
    There's a lot going on in this bowl so i'll try to break it down and be brief. Lots of Middle East but also Japanese influence! The best of both worlds.  Kind of a Quinoa Salad on crack. I steamed vegetables with some spices, which has been working well in my bamboo steamer. I can eat steamed vegetables straight and love it, so with the right herbs/spices it's even better.  #2 Especially because I got Zahatar from my visiting family straight from from Israel and am so stoked on it! It's like a sesame/thyme/fennel sensation and I love it.  I've also been using a bit of Miso paste in my meals recently and love that flavor as well. Just mix it into any liquid and transform your food (partially inspired by this great info)! This bowl is basically an amalgamation of awesome. Too much deliciousness going on to describe. I used some Matcha Salt again finally to top as well and it's so salty, tasty, and adds the tiniest crunch due to the sea salt and matcha formed granules.
    -1/4c Quinoa, Olive Oil
    -A dab of Miso mixed into a just enough Rice Wine Vinegar/Chicken Broth to dissolve
    -Steamed Butternut Squash (Tjoes prepped, leftover) with Sesame Oil and Seeds
    -Steamed Crimini Mushrooms and Broccoli (TJoes prepped) with Zahatar
    -Steamed Carrot with Rosemary and Basil
    -Avocado, Olives
    -Spinach Bolani
    -Matcha Salt

    Mega All Mountain Ride Muffin Fuel
    This muffin courtesy of Lenny and Larry has been in my freezer for a while, and I figured what better way to fuel up for a massive celebratory mountain bike ride after getting back from Sea Otter?  It may not be oat bran, but it has extra protein and all good real ingredients so it's nutritionally sound. A normal blueberry 'muffin' (cake in disguise) definitely wouldn't of sat so well with me, especially before a ride, but this left me feeling great. Even 4 hours and 6000 feet later! It tastes like a moist delicious blueberry muffin should.  #3 I accompanied with some tasty fresh blueberries and homemade Pomegranate-Kombucha Tea (i've been a fiend for getting lots of vitamins/antioxidants recently).

    Race Deliciousness, Mexican Chocolate Oatmeal, and Much More

    Another solid race! After this cookie bar I didn't feel the need to eat anything super extravagant for dinner and brought all the leftovers from my race prep meal so munched them all down on the car ride home. Convenient and tasty.
    The Blind Date
     Wanted to try something a little bit different from Lenny and Larry after the race (after a recovery drink).  These Big Sur Bars are delicious and I love the taste but one bar packs 600 calories (3 servings) and it's hard impossible to eat one third. Pecans, Coconut, Dates, for days, all on top of a Blondie like cookie bar! I love dates and pecans so much! #1 All real healthy ingredients with solid nutrients although I usually feel a little bad after eating them because of the butter in it I think (on top of the calories, sugar, and fat), but didn't really feel it this time and was able to actually feel full after the race for a few hours. Like almost 3...
     Mixed
     Repeat 'Basic' Overnight Oats! Unmixed
    Simple yet Special! No more pumpkin butter but did include 20g of Pomegranate juice (more evident in the mixed up photo). It's so awesome knowing exactly what I need to eat before a race (down to the weight of each ingredient!). I don't have to worry or think about over or under-eating. Just have this an hour after I wake up, a Macro Bar 2 hours before the start (Cherries and Berries all day!), and a Gu 15 minutes before the start (for a race at 1pm and waking up at 8. Dialed. Fluids = this big jar of tea, 1 big bottle of water during warm up, and a little more right when I woke up.
    -65g oats, 180g soymilk, cinnamon, nutmeg, cloves
    -25g Pomegranate Juice
    -Blueberries, Almond Butter
    -Almonds, Dried Cranberries

    Repeat Race Prep Dinner: Mediterranean Lemon Garlic Chicken
    I did everything the same except was too lazy to make the Tahini dressing so just used the second half of my lemon directly on everything. Brought back avocado, awesome with hummus and the chicken! I also had leeks again cooked with the chicken, which are always delicious.  Definitely now a must for this meal. The corn and wheat flour tortilla i'm not digging so much, it's a little too mexican tasting/not as good or healthy as a quality wheat (not the low carb processed kind) or brown rice tortilla. I definitely ate a lot more than what's shown here too!

    Wasn't gonna include this, but some noteworthy additions for Turkey Nori Wrap round #2  I still have no vegetables, and man am I digging having a bunch of dried seaweed as back up!  I had no onion this time so wanted something more to add, going with frozen cranberries to compliment the turkey. Then I tried out one more kind of dried seaweed that you just soak in water to prepare for seaweed salad, and used rice wine vinegar instead of Temari in my dressing. Definitely improvements.

     Creamy Mexican Hot Chocolate!

    Stokage this morning for sure! I busted out some Cocoa Powder for the first time for some oatmeal. #3 Riding right after breakfast at home = two differences from my experience during the week. I get to eat something more carbish/sugary since I am about to go ride (not sit in a desk), and I can actually prep something.  This wasn't even sugary, but you could easily sweeten with maple syrup or whatever you please.  Tried as creamy choco-banana oatmeal but then opted for Mexican Hot Chocolate Oatmeal for the extra kick and health benefits. Equally tasty either way!  I actually thought a lot about health making this, cocoa is super healthy (not chocolate with a bunch of milk fat and sugar) and gives a bit of caffeine (good during exercise), and then the seeds and spices are very beneficial as well.  Without spices it was like nutella (next time will do hazelnuts for a true nutella experience for sure) with a big emphasis on creamy choco-banana, but then it got a whole bunch of flavor with a kick of spicyness, and only a hint of banana. The creamyness definitely comes from using oat bran w/ the oats and soymilk.

    Two Yummy Chicken Dinners, Garlic, Ginger, Pomegranate Included

    If flavor could be illustrated in a picture by coloring (grey being flavorless) than this meal would be a tie-dye explosion! The grilled onions alone had the classic lemon-thyme-garlic taste, and the quinoa w/ sun dried tomato is bomb in itself as well.  Pair those with some delicious Lemon-Ginger-Tahini dressed salad and a bit of chicken leftovers and you have yourself a feast. Yes these started separate on my plate but of course all mixed together. #1 It's key to put carrots in ice water for a little while before enjoying to make them extra crisp and crunchy!
    -Dried Vegetable Quinoa with Sun Dried Tomato
    -Grilled Red and White Onions (grill pan, olive oil, med-high heat, garlic, cilantro, lemon, thyme)
    -Mixed Greens w/ Carrot, Tomato, Green Onion, Olive
       -Tahini, Lemon, Ginger Juice

    Pomegranate Ginger Chicken and Sesame Vegetables
    Wasn't trying too hard here, just some basic usuals but figured i'd include it to not make this post all lonely with one meal.  #2 Steamed some vegetables, the asparagus on the bottom (requires more cooking) of the two bamboo steamers, with a bit of sesame oil and sesame seeds. So good! I then went with some Brown Basmati Rice and Adzuki Beans to accompany some chicken that I remixed in a pan with Pomegranate-Ginger Sauce and Onions. And some Tahini and Sesame Seeds to top. Quick and tasty. And that broccoli stuff is actually broccoflower, not romanesco broccoli, they each have their own slightly different yet familiar flavor, so it's nice to mix it up. Romanesco is quite hard to find though.

    Pomegranate Double Time, Indian Channa Dal

     
    Chana Dal!
    Stoked on my second time using Dal, this time with intention of following the recipe I originally got it for! I sort of followed it, but mostly went with a bit of this and a bit of that as usual. It was a bit spicy, and all the wonderful spice aromas filled my kitchen. It had plenty of crunchiness in it between the sauteed vegetables and toasted almonds, and went perfectly in a wrap. Next time i'm going to make mass amounts and then eat leftover wraps for days...mmmm
    -Dal (Split Pigeon Peas or Lentils) with a tiny bit of Agave Nectar 
    -Spice Combo: Garam Masala, Curry Powder, Turmeric, Cardamom Powder, Mustard Seed, Togarashi (for chili flakes), Pepper and Sea Salt
    -Garlic, Ginger, Onion, and Fennel Sauté
    -Toasted Almonds, Green Onion
    -Steamed Broccoli and a Tortilla
    The Most Epic Pomegranate Beet Salad
    This salad was mega. The picture does not come close to doing it justice. Combine your standard beet salad complete with Basil, Avocado, Green Onion, and Rice Wine Vinegar, and then mix it all together with an epic Pomegranate Ginger Chicken Salad, complete with Dried Cranberries and Star Anise.  All due to having the right leftovers! Each bite had a different delicious highlight. So bomb.
    -Spring Mix, Tomato, Green Onion Leftovers
    -Ginger Chicken Breast Leftovers
    -Avocado
    -Pomegranite Dressing (Pomegranite Juice, Olive Oil, Basil, Star Anise, Ginger Juice, Rice Wine Vinegar)

    Pomegranate Overnight Oats
    Definitely stoked my mom got a small container of Pomegranate juice from the Farmer's Market! So far I had some straight, used some for Pomegranate Kombucha, and now some for Overnight Oats.  It made for a delicious purple hued bowl of oats and goodies.
    -60g oats, 150g soymilk, 5g Pomegranate Juice
    -6 Brazil Nuts, chopped, Dried Cranberries
    -Blueberries and Strawberries

    And I made my overnight oats using my new containers from CSN stores. These glass jars by Bodum are light, hold a ton of any grain, bean, or dried food, look nice, and the tops come off and on like your lifting up a cloud, except they are still totally air tight. Win-Win.
